Pomegranate is one of those ingredients that I think feels instantly festive, and the burst of sweetness is always so tastyI I used it as a topping for our Christmas pav this year and it absolutely lifted the whole thing - bright, juicy, and a perfect contrast to the cream. If you want your pav to look and taste a bit more special, this is the easiest win. Also tops well for sweetness in salads.

Shiny red arils are the edible part of a pomegranate, they are flavourful and versatile and well worth the effort it takes to extract. Many experts recommend cutting the fruit in half, holding the open side over a bowl and giving a good few whacks on the un-cut side with a wooden spoon until all the arils fall out.
