pretty fresh mostly crispy but once open they go soggy pretty fast so I find it needs to be eaten in less than 2 days from opening otherwise it goes soggy. we use for salads sandwhiches and bruschetta adds a nice fresh flavour to all great paired with tomatoes and feta
