Inside, the crumb is soft with a slight chew and small air pockets, which is what I look for in a good sourdough. The flavour has that mild tang you expect from sourdough, but it’s not overpowering, so it works well for both sweet and savoury toppings. I’ve used it for toast, sandwiches, and even grilled cheese, and it holds up nicely without going soggy.
