The cooler climate of Adelaide Hills delivers a Pinot Noir with delicate and perfumed florals. A combination of dark cherry, red fruits and subtle spice. This medium bodied pinot noir is well structured with bright acids and balanced oak. This pinot noir has velvety tannins and savoury notes that give beautiful length to this wine. 'This wine smells like black forest cake – a really dark one made with bittersweet dark chocolate, late season deep black cherries and spicy vanilla pod. The cocoa powder vibe extends to the palate with fine savory tannins. The flavours are fresher and tangier here – strawberries and redcurrants with a hint of fresh thyme. It's juicy and would be delicious slightly chilled. However, it's winter here in Melbourne so I will be pairing this with a simple roasted vegetable salad; caramelized roasted beetroot and pumpkin atop fresh baby spinach, sprinkled with crumbled chèvre and toasted walnuts.' - Nicole Bilson, winepilot, June, 2021.
