Underripe or overripe they are amazing. I love when pears are super crunchy without much flavour or on the flipside, when they are juicy and bursting with sweetness. You simple don't get that versatility from other (inferior) fruits like bananas or berries.

I love using William Bartletts as they come fresh in store perfect for baking and using in savoury recipes. I just made pork and pear sausage rolls with them and they hold up well without losing texture.
