This kale slaw is my current ADHD lunch fixation. It’s super easy to make and goes great with some shredded roast chicken or tuna. It’s well balanced too, full of nutrients and easy to assemble. The dressing is a favourite of mine! It’s tangy and creamy with just enough herbs to compliment the kale, which can be a little boring on its own. Only downside I find is the size. It’s a little too big for one meal but too small for two. I also wish the coconut was removed from the salad topper packet and I feel like it doesn’t overly go with the other flavours.

MY FAVOURITE SALAD! i have this almost every night. its fresh and the balance of crunch in the kit is really good. i love that they add the yoghurt dressing, coconut and cranberries as well. it really elevates the dish. as packaged salad doesnt last too long i spread this out over about 4 nights but so worth it! pro tip, add some sliced apple its even better
