These potatoes are great because they are lower in carbs, but they taste the same as a regular potato. So versatile too!

I really like the spotlight baby potatoes because they come in very consistent sizes which means it’s really easy to cook them. I don’t have to pre-cut them or worry about what size they are because they are all pretty similar and so they all cook at a similar rate.
