Decent quality pork with good marbling, but I found it a bit tougher than expected. It still tastes good when cooked right, but not the most tender cut I’ve had.

Pork scotch fillets are perfect for frying (covered in your favourite slices), cut into cubes and turned into a stir fry or braised in a gravy sauce. Whatever way you eat them, you know they will be the leanest cut.
