It’s got a nice balance, not too sharp, but still rich enough to give sandwiches, toasties, and pasta bakes that satisfying cheesy depth. I like how it melts smoothly without going oily, and it’s just as good sliced thick on crackers as it is grated over a hot bowl of spaghetti.
