This is one of those easy, no-thought staples I always keep in the fridge. I love the mix of soft, tender leaves with that peppery kick from the rocket, it instantly makes a simple meal feel more interesting. It works just as well alongside grilled meat as it does tossed with olive oil and lemon for a quick lunch. I also find it holds up better than plain baby spinach and doesn’t wilt as quickly.
