All are edible however the colours also indicate the levels of sweetness and as red capsicums are the most mature, they are the sweetest and contain the most Vitamin C. Due to their almost fruity sweet flavour, this is the best to eat fresh or pack in kids lunchboxes. Did you know that capsicums originated in South America and seeds of a certain wild variety date back to 5,000 B.C! Yikes, that's older than us!
