I used these fresh red capsicum in a slow cooked chicken and churizo gumbo. even after several hours on low they still held their colour and crunch. they are deliciously sweet and juicy.

A very versatile vegetable with a wide range of uses in cooking (I like stir fry or added to curries) and potential health benefits. It's a good source of vitamins A and C, and contains various antioxidants and other beneficial compounds. I buy them in various colors, with red ones generally being the sweetest and most nutritious due to longer ripening. Green for usually it is the most costs effective. If in the mood for a rainbow, I buy them in green, red and yellow or/and orange!
